Sweet but with a touch of savory, this side dish is a tropical treat. I like it with pork or spicy chicken.
- 3 or 4 Yams or Sweet Potatoes
- 2 or 3 Bananas
- Brown Sugar
- Rum (dark would be better but I only had white on hand)
- Cumin
- Cinnamon
- White Ground Pepper
- 2 to 3 tablespoons Butter
- Pecan Pieces

Melt the butter. In the meantime, peel the sweet potatoes.

Slice them into rounds.

Cut the bananas into chunks.

Sprinkle with a bit of brown sugar, maybe 1/3 of a cup.

Add a teaspoon each of cinnamon and cumin and a dash or two of white ground pepper.

Add a splash of rum…

…the melted butter…

…and a handful of pecans.

Stir it until every thing is well coated.

Spread it onto a baking dish and bake at 350 until the sweet potatoes are soft and tender, maybe 30 to 45 minutes? I really forgot to look at the clock.

Take it out of the oven and let it sit for a few minutes before moving to serving dish.

Stir it all together and serve.
