Here’s one last batch of cookies today before I head into preparing for our two big dinners, but these are probably the best. Oatmeal cookies with chocolate chips added are nothing new but this year I decided to go for broke and add a bit of everything that sounded good. A chewy combination of chocolate, coconut, pecan and butterscotch makes them irresistible.
- Butter, 1 cup
- Brown Sugar, light or dark, 1 cup
- White Sugar, 1 cup
- Eggs, 2
- Vanilla, 2 teaspoons
- Flour, 2 1/2 cups
- Baking Powder, 1 teaspoon
- Baking Soda, 1 teaspoon
- Salt, 1 teaspoon
- Oatmeal, 1 1/2 cups
- Chocolate Chips, 1 cup
- Butterscotch Chips, 1 cup
- Pecan Pieces, 1 cup
- Shredded Coconut, 1 cup
Preheat oven to 300. Combine the butter with both sugars and beat at low speed until well blended.
Mix in the eggs, one at a time, followed by the vanilla.
In a separate bowl, whisk together the flour, salt, baking powder and baking soda.
Stir the flour mixture into the butter mixture.
Stir in the oatmeal.
Add the chips, pecans and coconut.
Stir just until blended.
Drop onto cookie sheets and bake for 18 to 20 minutes, depending on the size of your cookies and if you like them chewy or crispy.
Cool on wire racks.
Enjoy! Store in a covered container and try to resist having them for breakfast!

I love trying all of your recipes! They turn out sooo wonderful! I tried these cookies tonight and they look absolutely fabulous!! Did you mean to put the oven temp at 350 instead of 300?
Nope, it’s 300 for 18 to 20 minutes and there was the mistake. I just corrected it but the original post said 10 to 15. Either way would probably work, higher heat for a shorter time or lower heat and a longer cooking time. Anyway, glad you enjoyed them!
I added toffee pieces instead of coconut and they were a hit! Thanks for sharing all your recipes.
Oooh, toffee sounds great! And my daugher, an avowed coconut-hater, would really like that change too!
