Easy BBQ Chicken

Here’s a really easy take on BBQ chicken. Feel free to make your own or use your favorite marinades and sauces, but I really like Stubbs.

Served with Cheese Grits and Spicy Collard Greens (recipes coming soon), it was a Southern version of one of our favorite menus, Rosemary Balsamic Chicken, Parmesan Polenta and Sauteed Spinach.

  • Boneless Chicken Breasts or Thighs
  • Stubbs Chicken Marinade
  • Stubbs BBQ Sauce

Pound the chicken to a uniform thickness.


Spread the chicken in a dish and cover with marinade. Refrigerate for a couple of hours or more.


Heat just a bit of oil over medium to medium high heat. Carefully arrange chicken in pan and reserve the marinade.


Brown the chicken on both sides.


Pour the leftover marinade over the chicken, reduce heat and cook until the chicken is done and the marinade is reduced.


Pour some BBQ sauce over the chicken, turn it a couple of times until it’s well-coated and the sauce is heated through.


Arrange the chicken on a platter and serve with more sauce.
