Grilled Chicken and Goat Cheese Sandwiches

Probably inspired by something I saw on Pinterest, these sandwiches include some of my favorite things, spinach, avocado and goat cheese.  Feel free to use your favorite tangy cheese.  Blue or gorgonzola would be just as good.  I added chicken for a heartier dinner sandwich but a meat-free version would be just fine too.


  • Chicken Tenderloins or Cutlets
  • Bread, multigrain Italian here
  • Spinach
  • Avocado
  • Goat Cheese
  • Butter
  • Creole Seasoning for a little kick (or your favorite seasoned salt)

KBP_2572Sprinkle the chicken with Creole seasoning.  Over medium-high heat, melt enough butter to cover the bottom of a skillet.  Just when it starts to brown add the chicken.

KBP_2601Cook until the underside is done and it turns easily then cook the other side until it’s done all the way through.

KBP_2607Heat a griddle or skillet to medium heat.  Lightly butter the bread and place one piece, butter side down.  Sprinkle on a bunch of cheese.

KBP_2610Add spinach and avocado slices.

KBP_2612Top that with a piece of warm chicken and the second slice of lightly buttered bread.  Press it gently with a spatula and let it cook until the underside is browned.

KBP_2614Turn it over and toast the other side.

KBP_2620Serve the up warm and enjoy!

Those look incredible. Goat cheese is one of my favorite cheeses, and the chicken certainly rounds out the meal. Love it. Thank you.
