There are a lot of great restaurants on Captiva Island but this night we decided we’d rather not leave the beach and the pool. The resort has gas grills by the pools, the kitchen in our villa supplied the basic equipment and the tasty beverage counter was well-stocked. A drive to Bailey’s General Store for provisions earlier in the day and we were set. Here’s what we bought:
- Steaks
- Potatoes
- Lettuce
- Avocado
- Red Onion
- Feta Cheese
- Salad Dressing
- Garlic
- Salt and Pepper
- Butter
- Wine
Get someone to put the potatoes in the oven..
..and pour a couple of drinks before heading down to the beach.

Enjoy a gorgeous sunset.

Hang out in the water for a while.

Eventually go back to check the potatoes and put together a salad.

This one’s basic, just lettuce, avocado, red onion, feta cheese and bottled dressing.

These steaks don’t need much, just some garlic and pepper.

Press some minced garlic and pepper into the meat.

Time for another drink. Fill a big plastic cup with ice and add coconut rum.

In these cups, it’s hard to see how much you’re pouring. Hold them up to the light so it’s not a total Mystery Drink.

Add pineapple juice.

And a splash of dark rum.

Go downstairs to the grill and put the steaks on.

While the steaks are cooking, sit in the pool or hot tub and enjoy that drink.

Steaks are done!

Throw a towel around yourself and enjoy!

Dessert? You can’t go wrong with anything from The Bubble Room. This rum cake was delicious.
