Black Bean and Corn Salsa

This combo is both versatile and easy.  It makes a great side dish but it’d also be good scooped up with tortilla chips, wrapped in a tortilla or topping a fajita.

The amounts given are just a guess.  It really doesn’t matter because you can’t mess it up.  Just throw it together until it looks and tastes right. A little jalapeno would be a great addition.  I left it out because the lone pepper in my produce drawer was well beyond fresh.

  • Black Beans, 1 large can
  • Corn, 1 1/2 cups
  • Grape Tomatoes, 1 pint
  • Avocados, 3
  • Green Onions, 4 or 5
  • Cilantro, 1/4 cup when snipped
  • Limes, 2 or 3, juiced
  • Salt/Pepper

Peel and dice the avocado.

Snip the cilantro.

Slice the onions and halve the tomatoes.

Drain and rinse the beans then stir everything together in one bowl.  Let it sit for a while before serving.  You can make it ahead and keep it in the fridge but let it warm up a little before serving.

It was a perfect side for Pan Fried Tilapia with Lime.  Serve it up and enjoy!

Haha….you posted this a day late as I prepared your Tilapia and lime last night! It was awesome!! Will definitely do the recipe again and will serve this along with it! Love your recipes.
