This combo is both versatile and easy. It makes a great side dish but it’d also be good scooped up with tortilla chips, wrapped in a tortilla or topping a fajita.
The amounts given are just a guess. It really doesn’t matter because you can’t mess it up. Just throw it together until it looks and tastes right. A little jalapeno would be a great addition. I left it out because the lone pepper in my produce drawer was well beyond fresh.
- Black Beans, 1 large can
- Corn, 1 1/2 cups
- Grape Tomatoes, 1 pint
- Avocados, 3
- Green Onions, 4 or 5
- Cilantro, 1/4 cup when snipped
- Limes, 2 or 3, juiced
- Salt/Pepper
Slice the onions and halve the tomatoes.
Drain and rinse the beans then stir everything together in one bowl. Let it sit for a while before serving. You can make it ahead and keep it in the fridge but let it warm up a little before serving.
It was a perfect side for Pan Fried Tilapia with Lime. Serve it up and enjoy!
