Spinach Apple Salad with Warm Honey Vinaigrette

Winter means cold weather, at least everywhere but here in sunny Florida where it’s 82 and I’m wishing for a cold snap.  Cold weather brings to mind warm, comforting foods but salads are still on the menu.  Inspired by this Honey Apple Vinegar I found on a Fresh Market expedition, this one was perfect for a cool evening.  Add a little grilled chicken and it’s a meal.  No honey apple vinegar?  White balsamic would be just as lovely.

  • Baby Spinach
  • Walnuts (or your favorite nuts)
  • Granny Smith Apple, 1
  • Shallot, 1 or 2
  • Olive Oil, 1/3 cup or so
  • Honey Apple Vinegar, 1/4 cup or so
  • Honey, 3 or 4 tablespoons
  • Black Pepper
  • Goat Cheese

Core the apple and cut it into thin slices. Peel the shallot and slice it into very thin rings.

Heat the olive oil in a large skillet over medium-low to low heat.  Add the shallot and cook, stirring occasionally, until the shallot softens and begins to brown.

Meanwhile, toss the spinach and walnuts into a large bowl.

Once the shallots are soft, add the apple slices to the pan.

Sprinkle with a little black pepper and drizzle in a little honey.  Stir it all together for just a minute over low heat, long enough to coat the apples and just take the chill off.  You don’t want them too soft.

Pour a little vinegar over the apples and stir it all together.  Remove from the heat, taste and adjust the amount of vinegar and honey to suit your taste.

Pour the whole thing over the spinach and toss it together.

Sprinkle goat cheese over the top and serve immediately.  Enjoy!
