This was an easy side dish to throw together using a couple of my my recent favorite ingredients, ginger and honey. Even with few minutes it takes to get them into the oven these are faster than baking whole sweet potatoes and it’s loaded with so much more flavor.
- Sweet Potatoes, 3 or 4
- Butter, 2 tablespoons
- Honey, 1/3 cup or so
- Ginger Root, 1 to 2 tablespoons, grated
- Salt/Pepper
Preheat the oven to 375. In the microwave, melt the butter in a large bowl. Peel the potatoes and cut them into chunks. I did thick slices then halved those.
Add the sweet potatoes and ginger to the bowl with the butter. Drizzle in the honey. I don’t bother putting it into a measuring cup first. It’s easier and there’s less waste because none sticks to the cup. Just drizzle in a fairly generous amount. Sprinkle in coarsely ground salt and pepper and stir it together until the potatoes are well-coated.
Spread the potatoes onto a baking sheet and put them in the lower half of the oven.
Bake for about 30 minutes or until they’re tender when you poke them with a fork.
Toss them gently in a bowl and serve hot. Enjoy!
