Honey and Fruit Pork Roast
I just love the combination of sweet and savory, especially when it comes to pork, and this is an incredibly easy way to enjoy it. Don’t limit yourself to apples and apricots. Use your favorite fruits to make it uniquely yours.
- Pork Roast, your favorite cut
- Apples, 2 or 3
- Dried Apricots, a cup or so
- Sweet Onion, 1
- Honey, 1/3 to 1/2 cup
- Dry White Wine, 1/2 cup
- Black Pepper
Preheat the oven to 350. Core and slice the apples. You can peel them if you like but I like the way the skin holds them together.
Slice the onion.
Place the meat in a roasting pan. Toss in the apples, onions and a handful or two of apricots.
Season the meat generously with black pepper. Drizzle everything with honey.
Pour in just enough wine to barely cover the bottom of the pan. It’ll keep the fruit and honey from burning and give you just a little liquid for basting.
Bake at 350 for about 20 to 30 minutes per pound of meat, basting occasionally.
Cook until the internal temperature reaches at least 145. Remove the pork to a platter and let it stand for another five minutes or so.
Stir up the fruit and serve it alongside the roast.
