With a jar of creamy good Green Goddess Dressing in the fridge and an assortment of produce in the fridge, this was a quick and easy dish. A handful of leftover chicken, shredded and tossed in, would make it a complete meal. A little Parmesan would make a nice addition too.
- Orzo, 1/2 to 3/4 pound or so
- Green Onions
- Cucumbers
- Grape Tomatoes
- Parsley
- Green Goddess Salad Dressing
Put the water on to boil for the pasta then peel and dice the cucumber, slice the onions, snip the parsley and halve the tomatoes.
Cook the orzo, drain it and then rinse it with cold water until it’s cool.
Mix it all together in a big bowl.
Add enough dressing to hold it all together nicely. Season with salt and pepper to taste. Refrigerate for a bit before serving if you like.

Hmm…how about some leftover turkey instead of the chicken? This looks like a great post-holiday meal. Love your blog…the photos are wonderful!
