A simple and simply delicious side dish, these potatoes are super easy. Make them when you want to pop something in the oven and forget it for a while, whether it’s to make the rest of the meal or just relax and wait until it’s done.
- Red New Potatoes, 8 to 10
- Lemons, 2
- Dill, 2 to 3 tablespoons fresh snipped or a good handful of dried
- Butter, 3 or 4 tablespoons
- Salt/Pepper
Preheat the oven to 375. Snip the dill if you’re using fresh.
Zest the lemons then juice the remains. Set the juice aside for now.
Scrub the potatoes then cut them in half.
Melt the butter in a large bowl. Add the potatoes, dill, lemon zest, salt and pepper. Toss it all together until the potatoes are well-coated.
Spread them out on a baking sheet and bake at 375 for about 40 minutes, or until the potatoes are tender when you poke them with a fork.
Drizzle with the lemon juice then scoop them into a serving bowl.

These look amazing! I think they would go well with a chicken dish I am making this week!
I paired them with Honey Dijon Chicken Thighs (recipe coming soon) and steamed broccoli. Great combo!
