As long as we’re cutting into a big cold watermelon to celebrate National Watermelon Day, we might as well go ahead and make this delicious watermelon salad. I know it’s been popular for quite a while but somehow it didn’t appeal to me until I tasted a similar dish at a party. I’ve always been a weirdo who likes salt on my watermelon so I’m not sure why I didn’t like the sound of salty feta and tangy vinegar on watermelon. But now I’m hooked!
- Watermelon
- Red Onion
- Basil or Mint
- Feta Cheese
- Balsamic Vinegar
- Olive Oil
Cut the watermelon into small chunks and toss it into a bowl.
Slice the onion into thin rings and snip the mint.
Crumble the feta over the top and add a little oil and vinegar.
Gently stir it all together and refrigerate until cold.

Yum! You know I have been through loads of watermelon & never seem to be able to keep any around long enough for recipes!
I love love love salt on my watermelon too! I have never met another person who does that! This salad looks delicious – I can’t wait to try it!
