Watermelon Cooler

Yes, yesterday was National Watermelon Day but it’s not too late to celebrate.  After all, it’s still hot and watermelon is still the perfect summer refresher.  This cool drink is easy and perfect for sipping by the pool.  It’s good just like it is but a more adult version with rum or vodka is just right for a party.

  • Watermelon, about 8 cups of chunks
  • Lemons, 2
  • Mint Leaves
  • Club Soda
  • Simple Syrup* (or sugar)

Cut into a cold watermelon and cut a bunch of small chunks.

Fill the blender with melon and squeeze in the juice of one lemon.

Add 6 or 7 mint leaves and about 1/4 cup of simple syrup.

Whirl it around until it’s completely pureed.

In a 2 quart pitcher, combine the melon puree and club soda.  Stir it gently to blend.

Pour it over ice and garnish with lemon, melon and mint if you like.  Enjoy!


*Simple Syrup is an easy way to sweeten cold beverages.  The sugar is already dissolved so you don’t have to stir and stir to mix it in.   I keep a jar in the fridge. I like it pretty thick and sweet but you can always use more water to a thinner, less sweet version.

In a small saucepan, combine 2 cups of sugar and 2 1/2 cups of water.  Bring it to a simmer over medium heat and let it boil just until the sugar is dissolved.  Let it cool, pour it into a jar or bottle and store it in the fridge until you’re ready to use it.
