Tender potatoes flavored with onion, herbs and Parmesan. Throw this dish in when you’ve already got the oven going.
You can mix it up a bit too. Use different cheeses or herbs, add garlic if you like. Use your imagination because you just can’t go wrong.

- Yukon or White Potatoes
- Sweet Yellow Onion
- Parmesan Cheese
- Salt/Pepper
- Butter

Scrub the potates and cut them into thin slices.

Grate a cup or so of cheese.

Slice the onion into thin rings.

Cover the bottom of a glass baking dish with a single layer of potatoes and a few onion rings. Sprinkle with salt and pepper.

I just remembered there’s fresh sage in the fridge. Snip it and sprinkle a bit over the potatoes. Rosemary would also work well.

Sprinkle lightly with cheese. Continue layering until the dish is full, ending with cheese. Slice 3 to 4 tablespoons butter into thin pats and place on top. Bake at 350 to 375 until the potatoes are tender, about 30-45 minutes. If the cheese is getting too brown, cover the dish.

Serve!
