Spicy Garlic and Blue Filet Mignon

August 13, 2011

A good piece of beef doesn’t always need much but this is an easy way to jazz up a filet mignon or any other steak.

  • Filet Mignon (or your favorite steak)
  • Garlic, minced
  • Black Pepper
  • Crushed Red Pepper
  • Coarse Ground Salt
  • Crumbled Blue Cheese
  • Butter

In a large skillet or saute pan, heat the butter over medium-high to high heat until it bubbles and just begins to brown.  The pan needs to be really hot before adding the meat. If it’s not hot enough the meat won’t sear, it’ll just stew a bit.

Arrange the steaks in the pan and top them with the garlic, peppers and a little salt.  Cook over high heat until they’re nice and brown underneath and turn easily, just a few minutes.

Turn them over and let them cook until they’re almost done to your liking.  I like it pretty rare so it doesn’t take long.

Sprinkle the meat with a generous amount of blue cheese, reduce the heat, cover the pan and let them cook for just another minute or two to melt the cheese.

Serve them up immediately and enjoy!
