In honor of National Grilled Cheese Day, here’s an oldie-but-goodie favorite. Like any grilled cheese, there’s really no way to go wrong. A little Parmesan or Asiago would be a great addition, along with a little roasted garlic.
- Crusty Italian Bread
- Ripe Tomatoes
- Provolone
- Mozzarella
- Fresh Basil
- Olive Oil
Slice the tomatoes and cheeses.
Heat the griddle or skillet over medium heat. Brush a slice of bread with olive oil and place it oil side down on the griddle.
Pile on a slice of provolone, a couple of tomato slices and a few basil leaves.
Add the second piece of bread and brush the top with a little more olive oil. Smash it down with a spatula and let it cook over medium to medium-low heat until the bread is lightly browned and the cheese is all gooey.
