Peanut Butter Fudge Pie

This one dates back to my days of copying recipes onto index cards, back in the dark ages before the internet when I’d check out stacks of cookbooks and magazines from the library and clip recipes from the newspaper. I don’t know the original source but it’s been a favorite here for many, many years. It’s rich and satisfying so a little slice goes a long way.

It’s easy but be sure to allow plenty of time for it to chill completely. It’s one to do a day ahead.  Save a little time and effort by purchasing a pre-made crust if you like.

The Crust:

  • Graham Cracker Crumbs, 1 1/2 cups
  • Sugar, 1/3 cup
  • Butter, 6 tablespoons

The Rest:

  • Cream Cheese, 8 ounces,room temperature
  • Creamy Peanut Butter, NOT all-natural, 1 cup
  • Powdered Sugar, 1 cup plus 2 tablespoons
  • Butter, 2 tablespoons
  • Cream, 1 cup
  • Vanilla Extract, 1 tablespoon
  • Semisweet Chocolate, 6 ounces

Melt the butter.  Combine the graham cracker crumbs and sugar then mix in the melted butter. Press the mixture evenly into a pie pan and refrigerate for at least 15-20 minutes.

Beat the cream cheese and peanut butter until well-blended.

Add one cup powdered sugar and the butter. Beat until fluffy.

In a small bowl, beat 1/2 cup cream until it begins to thicken. Add 2 tablespoons powdered sugar and the vanilla then continue beating until stiff.

Gently fold the cream into the peanut butter mixture, about  a third at a time.

Spoon the filling into the crust and refrigerate until firm and set, at least 3 hours.

Meanwhile, heat the remaining 1/2 cup of cream over low heat. Add the chocolate and stir over very low heat until the chocolate is melted and the mixture is nice and smooth. Set it aside and let it cool completely.

Once the filling is firm and the chocolate is completely cool, spread the chocolate over the top of the pie. Refrigerate again, until the chocolate is set, about 3 more hours.

Serve it up and enjoy!

Oh. My. Goodness.

Two of my favorite things; chocolate and peanut butter. I’m not going to tell you that I want to just dive into that bowl of chocolate in the picture where you spread it over the pie.

I have to make this. We have a bbq coming up in a few weeks and this looks like something perfect to bring along.

I really want a piece of this right now! Thanks for sharing!
