Fresh berries and whipped cream to accompany the pound cake…
- Fresh Strawberries
- Fresh Raspberries
- Any other fruit you want to add. Blueberries and sliced peaches make a great addition.
- 2 cups Heavy Cream
- Confectioners Sugar
- Vanilla Extract
- Brandy (optional)
Chill the bowl, beaters and cream in the freezer for a few minutes. The cream will whip a lot faster and easier when everything is very cold.
Rinse and slice the strawberries.
Combine the berries with a couple of tablespoons sugar. Add a splash of brandy if you like.
Beat the cream until it starts to thicken then add maybe 1/4 cup of confectioners sugar. Add more or less sugar, depending on how sweet you want it.
Add a teaspoon or two of vanilla extract.
Beat until it’s stiff and thick.
Serve, along side the berries.
