The weekend is here and summer heat is right behind. This drink is just perfect for relaxing by the pool on a lazy weekend afternoon.
I’ve never actually ordered one of these at Ruby Tuesday (because I never eat there) but that’s where this recipe originates. In fact, the last time I was there was years ago and this drink was featured on their tabletop drink menu. We all agreed it sounded good so I scribbled the list of ingredients on a scrap of paper from my purse and forgot about it. It wasn’t until our next big summer party that we tried it.
It’s delicious but deceiving. It tastes like fruit punch and the alcohol is barely noticeable. But BE CAREFUL, they sneak up on you and you might find yourself more ‘relaxed’ than you’d like to be. A pitcher to share, sipped slowly, is the way to go.
This fills a 2 1/2 -quart pitcher but it’s easy to make single drinks. Just keep the proportions the same. I think the restaurant’s version has equal parts of all the booze, but I use just a little less vodka since it already packs a wallop. And, since I’m not a huge cranberry juice fan, I use mostly pineapple with just a splash of cranberry instead of equal parts.

- Coconut Rum, 1 1/2 cups
- Peach Schnapps, 1 1/2 cups
- Vodka, 1 cup
- Pineapple Juice, 4 to 5 cups
- Cranberry Juice, 1 cup
- Fresh Fruit for garnish, optional
Measure all the liquors.
And pour them into a pitcher.
Toss in some ice and add pineapple juice until the pitcher is nearly full.
Top it off with a cup or so of cranberry juice and stir it up.
Garnish with a chunk if pineapple if you like.
Serve up over ice and enjoy!
