A pork tenderloin always good and there are so many ways to dress it up. My go-to is the easy and tasty Pork Tenderloin with Mustard and Thyme, which is the base of this dinner. But how to jazz it up? How about caramelized onions and blue cheese? Served alongside Garlic Sage Mashed Potatoes, it made for a very tasty combination of flavors.

Then move on to the onions and so forth…
- Sweet Yellow Onions, 3 or 4
- Butter, 4 or tablespoons
- Brown Sugar, 1/3 cup
- Balsamic Vinegar, 3 tablespoons
- Black Pepper
- Crumbled Blue Cheese
Slice the onions into rings.
In a large saute pan, heat the butter over medium heat until it bubbles and just starts to brown.
Add the onions and let them cook over medium low-heat, stirring often, until they start to get brown and soft.
Once they’re getting nice and brown, add the sugar, pepper and vinegar.
Let them cook a few more minutes, until they’re completely soft and sweet.
When the pork is done, take it out and let it sit for a minute or two before removing the twine and spent thyme sprigs.
Pour the onions over the top, sprinkle with a bunch of blue cheese and enjoy!
