Green Beans with Lemon and Shallot

Think green beans are boring? Think again.

  • Fresh Green Beans
  • One Lemon
  • A Couple of Shallots. No shallots? Use red onion instead.
  • Olive Oil
  • Salt/Pepper

Rinse the beans and trim the ends.


Slice the shallots and remove the papery outer layer.


Zest the lemon. The little zester tool makes it easy.


Squeeze the juice from the now-naked lemon. This little Mighty OJ juicer is the best one I’ve ever used. It’s fast and efficient and there’s no motor to burn out.


Steam the beans until they turn brighter green and are barely tender.


In the meantime, in a large frying pan, heat a bit of olive oil over medium heat.


Saute the shallots until they begin to brown.


Add the green beans and cook for a few minutes, stirring occasionally, until the beans are tender.


Stir in lemon zest and lemon juice. Season with salt and pepper.


Serve!
