Rice is very easy but it can also be very boring. Here’s an easy way to jazz it up just a bit. Lime works great too. If I’d had parsley in the fridge, I would have added a little along with the lemon juice.

- White Rice, 2 cups
- Olive Oil, 2 tablespoons or so
- Garlic, 5 or 6 cloves
- Lemons, 2
Mince the garlic. Zest the lemons and then squeeze the juice from the remains.
Heat the olive oil over medium heat in a medium-size saucepan. Add the garlic and rice and stir it for a few minutes, until the rice starts to turn white. Add the zest.
Add four cups of water, increase the heat and bring it to a boil. Cover the pot, reduce the heat to low and let it steam for about 20 minutes.
When the rice is done, stir in the lemon juice.
Garnish with a lemon slice, serve and enjoy!
