Okra Chips and Dip

January 18, 2011

Yes, these are chips made from okra and they’re delicious! They’re light and crispy yet they taste like fried okra.

I first tasted these a while back at Okrafest, an annual party devoted to all the goodness that is okra.  As far as I know, they only come from Fresh Market so when last week’s travels took me past the store I couldn’t resist a stop.

They’re good all by themselves but since dip is a good thing, I came up with this combination from the pantry.  Feel free to jazz it up or change it around.  You can’t go wrong!

  • Okra Chips
  • Cream Cheese, 8 ounces
  • Sour Cream, 8 ounces
  • Old Bay Seasoning, 2 to 3 teaspoons
  • Creole Seasoning, 1 teaspoon
  • Green Onions, one bunch

Bring the cream cheese to room temperature and thinly slice the green onions.

Beat the cream cheese until it’s nice and fluffy then mix in the sour cream.

Add the Old Bay and Creole seasoning,  Adjust the amounts to taste.

Stir in the green onions and let it sit in the fridge for a while before serving.

Serve it up at your next party.  Or don’t wait for an occasion, just enjoy!

We were just talking about okra chips on #gardenchat Monday night. I love, love, love okra! Nathalie Dupree told me how to do the okra chips…and we love them! Love them as pickles too….and baby okra pickles are great as a Bloody Mary garnish! On Friday, I’ll be posting growing tips for okra. Hope you will check it out. Joyce

I’ll definitely check it out because I’m planning to expand beyond container gardening this year and okra is on my list!

I’ve made this a couple of times now. (Sadly, my grocery stopped carrying the okra chips, but we have green bean chips and root vegetable chips that work just as well with the dip.) The duo went over well at my sister’s bridal shower. Thank you!
