Sweet and juicy watermelon is the perfect summer fruit. Add a hint of mint and a touch of lemon and it freezes into summer perfection.
Once it’s frozen, I have a feeling it’d be good served with a splash of vodka for a grown-up treat.
- Watermelon, enough chunks to fill a 2 qt blender jar
- Juice of 1 or 2 lemons
- Mint Leaves
- Simple Syrup, 1/3 cup (or use corn syrup)
Cut into a fresh watermelon and enjoy that wonderful fragrance
Cut the watermelon into chunks and fill the blender container.
Add simple syrup.
Pour in the lemon juice.
Throw in a few mint leaves.
Puree just until it’s well-blended.
Chill the mixture until it’s very cold then pour it into your ice cream maker.
Freeze according to your machine’s instructions.
If you want it pretty, garnish with a melon ball and mint leaf. Enjoy!

Have you ever considered straining the watermelon after having blended it? I’ve seen that done in frozen drinks before to remove the solids and I wonder if it would make for a smoother texture.
I like the chunkiness and texture so I didn’t strain but I’m sure it would work.
