The combination of fruit and wine is always good but I always look forward to summer fruits for this light and well, summery, version. Choose your favorite white wine, throw in your favorite summer fruits and you can’t go wrong. I like simple syrup and club soda but it’s great with ginger ale too.

- White Wine, I used Pinot Grigio here but I prefer Chardonnay. The choice is yours.
- Simple Syrup, about 3/4 cup.
- Club Soda
- Brandy or Peach Schnapps, about 1/2 cup. (I didn’t have any so I left it out of this batch but it’s a nice addition.)
- Peaches, 2
- Apricots or Plums, 2
- Cherries
- Lime or Lemon, 1
Slice the peaches and apricots then drop them into a large pitcher.
Add lime slices.
Throw in a handful of cherries.
Add enough simple syrup to cover the fruit about halfway.
Muddle it all together.
Pour in the wine. You can let it sit for a while at this point, just to give the flavors a chance to blend. I couldn’t be bothered to wait.
Top it off with club soda or ginger ale and stir gently to blend. Taste it and add more syrup if you want. That shot of peach schnapps or brandy is a good idea too.

Serve it up over ice and enjoy!
